Che Khoai Mon
1 can coconut milk (~14 oz)
1/3 cup sugar
1 cup cubed raw taro
1/4 cup
instant tapioca balls
toasted sesame seeds for garnish (optional)
Put coconut milk, sugar and taro in a pot, simmer for 20 minutes or until taro is fork-tender but not mushy (do not boil, this will curdle the coconut milk; also if taro is cooked too long, it will fall apart and the starch will all come out and over-thicken the liquid). Add in tapioca and simmer for 5 more minutes. Let cool a bit. Serve in a bowl and garnish with toasted sesame seeds.
